The town of Herrera sits north of the Hereje river, high on a plateau and surrounded by mountains. Here, near-perfect coffee-growing conditions exist, hence the high density of coffee plantations and seasoned farmers.
Finca Las Delicias, run and owned by Yeni and Luis Edier, is about 30 minutes from the town centre. When she inherited the farm in 2002, they both decided to fully dedicate it to coffee production as their means to provide for their family.
Around 5 years later, they started researching specialty coffee production methods to access better selling prices and a more stable market. Aside from improving the quality of their coffee, they also focused on implementing environmentally-friendly practices. For example, protecting the natural water sources and preserving a portion of the indigenous forest that exist within the farm.

Colombia is one of the largest coffee producers in the world and benefits greatly from having one of the most unique and complex set of micro-climates of all coffee producing nations.
The word ‘Tolima’ comes from the local indigenous language and means a “river of snow or cloud”.
Machines are used to remove the flesh from the coffee cherry before being fermented in water, washed again, and finally sun dried. This process tends to result in more distinct, cleaner flavours.
